Description
The grapes for the 2021 Limited Release Napa Valley Zinfandel come from the famous Stagecoach Vineyard in Atlas Peak. Our Zinfandel is harvested by hand in the cool early morning hours before the heat of the sun can warm the fruit. Upon arrival at the winery, the grapes are carefully sorted and destemmed into small, stainless steel tanks for three days of cold soaking. After the soak, the must is warmed, and yeast is added to begin fermentation. Gentle punch-downs are administered three times throughout the day in order to extract fruit flavor, color and tannin from the skins.
