2016 Limited Release Napa Valley Unfiltered Chardonnay
Our full bodied unfiltered Chardonnay showcases aromas of caramel, lemon meringue, butterscotch and baked pear. Flavors of stone fruit, lemon crème and toffee are followed by a long and creamy finish.
The Chardonnay was handpicked at night for optimal ripeness. The juice was barrel fermented for a month. Malolactic bacteria were added to start malolactic fermentation. Malolactic fermentation softens the wine’s acidity and enhances the body of the wine. We stirred the barrels weekly to suspend the yeast. This action develops a rich and complex palate. The wine is aged sur lees for fourteen months. The wine was not filtered before bottling, which allows the wine to retain all the flavors from the grapes and oak.
The 2016 vintage began with very little rain, bud break occurred between the end of February and early March. With warm and dry spring and early summer, the vines develop healthy canopies and fruit set was balanced. The growing season was lengthened due to cool summer. September had a few heat spikes to push fruit to optimal sugar levels. The 2016 vintage was very balanced and ideal for producing wines with excellent flavor and resolved tannins.
